I've been told a few times that max does not have double sided polys and it must be faked using double sided textures. But I have noticed, if I extrude an edge from the center of a plane, then surprise, the new extrusion appears to be double sided.

That's because there are two faces :)
Open up your extrude setting to check out the parameters under edge.

Do you see extrusion base height?

The bigger the value is, the farer newly created faces' base are.

If you have that set to 0, it looks like there is a double sided poly.

right click object>properties>un-check backface cull:)
