Is there some sort of mental ray shader I can plop onto an object so it doesn't get included in the alpha channel?

Yes there is, its a maya material and its called usedBackround.

mip_matteshadow is a hidden shader and it's quite complicated to set up. But if you need mental ray shader then you should check this website to see how to use mip_mattershadow.
