operations are cumulative and everything adds up. When you leave history, there is a long list of nodes in your scene and the software then has to additively run operations on the geometry based on everything that was done before it. That way if you go back and change, say, the angle on a bevel, everything done after that is affected. This can be used to your advantage but typically when modelling, hundreds of thousands of history nodes are created. If you don't constantly delete them, they build up quickly and slow everything to a crawl.
