I haven't really looked at the animation of you engine yet, but speaking as mechanical engineer those piston heads look kinda of flat to me. V8 engines are usually in perfomance cars and manufacturers tend to sculpt them up a bit. Such engines usually have higher compression ratio than standard cars so those piston head get close to the values you usually have ridges cut in. Take a look at a few piston heads on google.
P.S I can't tell which values are the inlet or the exhaust ones, but just a quick tip make the exhaust values smaller than the inlets. If you have worked on an engine you will know that there is a size difference.

superb level of detail. Did something myself a while back and altho not up to this level of detail it soon made me want to go about building my own engine block lol!

Flat top pistons with cutouts for the valves might be a little more visually interesting but dished pistons aren't incorrect. As for the model, I think the pistons in the first image look better. I've never seen dished pistons that are a smooth bowl as in the second, chrome image.
I do agreed on the valves though; exhaust valves (the ones on the outside cams) should be smaller. And I would suggest making the clip longer and have the camera not in such a hurry.

Wow! Looks great.. can you shed some light on how you went about rendering that last image. Is it Vray? Mentalray?

I rendered it in yafray, and did some postproduction in blender node editor, below you can see raw images only with added f/x
