They give you independent control of each axis curve.

as far as i know, there is know way round a gimbal lock, the only way i've seen people do it is with a good rig with extra controls to allow you to still animate when the joint is all locked up. other than that, just animate carefully! you will notice gimbal lock happening a lot when you start to get into a lot of spins and actions that rotate the character large angles. one thing to note is to make sure that the rotation orders of your joints (check the help) are set up the best they can be, but at the end of the day, there's nothing you can do to completely eradicate the problem.
you should be ok though, i didnt even come across that problem for well over a year - why is it i seem to have to deal with it nearly every day now! :D
(im not sure how to do it in max, but if you know somebody with maya, double click on the rotate tool and change the rotation type to GIMBAL. this will show you EXACTLY what's going on underneath everything that maya is doing for you. try rotating all the axis, have a play around and you'll sooon notice what's going on - when two axis near each other, THAT's gimbal lock).

maya has a useful Euler filter. it helps alot when gimbal rears its ugly head.

There is no use!!!! Only werkaround hacks. I find *authentic* Quaternian f-curves to be consistently WAAAYYY more stable. At least it's been that way for me from as far back as the last millenium.
I'd be rilly down for hearing what other interpolation solvers animators are digging.
peace d=^)
*EDIT: Euler sounds like "Oiler" so watch yrself, cos if you're not careful, your footing can get slippery pretty quick. *
