1. Is there a possiability to take OFF a material from an object WITHOUT assigning a new one ?
2. Is there a way to show a Blend material on an UVW object in the viewport ?

i don't think about your questions, but i guess isn't possible, cause the "show map in viewport" of blend shader are disabled.
And the other i never need to do.

all you can do is show the blend map in the viewport :shrug:

as to your first question: you can remove a material by assigning it NONE via the Material Editor->Material/Map Browser and dragging NONE onto your object.
or you can type this maxscript into your command line: $.material = undefined
as for blend textures showing up in the viewport: blend and mix End Results only show up at render time, so you won't be able to see the smooth transition between materials in the viewport. However, you can use Render to Texture if you absolutely have to see the End Result in the viewport. NOTE: there is a bit of a bug using Render to Texture with Blend materials in how it inverts the mask. This however doesn't occur with Mix maps, so I recommend using Mix if you're going to be doing any texture baking.

Blend is a type of Material (like Standard, Top/Bottom, etc.) and blends between two sub-materials using a mask. So you could blend between a metal Standard material and a phong Raytrace material if you wanted.
Mix is a type of Map, and can only blend between two maps (e.g. two bitmaps) using a mask. It is essentially the same concept as the Blend material, but applied on the map level. You would use a Mix map in your diffuse channel, for example.
