Those prices are pretty good, shame that there's no 8 core version though and the case is fugly.

there is 8 core version - its the d20 - in the add on section is the option for second cpu...

OK, I couldn't see that anywhere.
What is the UDIMM and RDIMM memory?...I thought that I7 did away with 'special' memory?

I thought that the nehalem xeons were basically multi CPU capable versions of the consumer chips and weren't constrained to FBDIMMS and ECC modules. So are the new Xeon's dependant on a different type of memory - RDIMM and UDIMM or are they just preferrable over standard DDR3 memory?

All nehalem-based Xeon platforms use "standard" DDR3, but it must be the "ECC" type.
FBDIMMS (fully buffered) memory is no longer required for Xeon.

RDIMM and UDIMM is a fancy way to say registered memory and unbuffered memory (or regular DDR3). Looks like they have the option to use either in the systems, but chances are the registered memory modules would be a good idea in a system with more then six modules. Cheers!
