how to go about making a cool bouncing ball with IK or dynamics that shows off really good squash and stretch properties.:beer:

You don't need IK for this at all...
Dynamics can create great squashing material effects (soft bodies), but if you want fine control over the animation, I wouldn't recommend it here.

Your best bet is to key it manually.
The attached plugin (by Andi Platen) 'squash' will simplify things for you (it is like the squash/stretch tool in Lightwave) by making sure that the volume of the ball stays the same.
