these two links should get you started
for texturing start here:
http://wiki.blender.org/index.php/Manual/Texture_Channels
and the following pages.

Here:
http://wiki.blender.org/index.php/Manual/User_Preferences
you can read about the user prefs and where they are stored (at the bottom).

Quickfix: File--> Load Factory Settings
File--> Save Default Settings

for uv mapping you should take a look at the manual
http://wiki.blender.org/index.php/Manual

not sure if i understand your second problem but it sounds like you set a scene as default (ctrl+u) if you want to start blender with a empty scene either delete everything and define that as default with ctrl+u or load the default profile under file\Load Factory Settings. attention all the changes you made like theme customization and such thigs will be lost!

here you can find a decent tut on UV mapping.
http://www.montagestudio.org/blog/
Thing is there is no UV Mode anymore. Itīs merged with editmode.

also have a look at these tuts:

UV face select mode no longer exists.

-Select object
-hit "tab" to go to sub-object mode
-set to "face select mode"
-hit "a" to select all
-hit "u" to unwrap (gives you options)

after that, any of the faces selected, will show in the "UV/Image Editor" window where you can further mess with the UV layout.

Aside from that, most everything else found in tutorials should not be hard to figure out.

Once you get the hang of blender you won't switch. Hang tuff buddy!
