I have a horrible old tutorial on using bezier nurbs (which are essentially subdivided patches) to model a head, main issue with it is the fact that cinema can't stitch them so eventually there comes a point where everything is made editable, and the welded together bit by bit (or you can use a great plugin called stitch and sew)
if you interested I can post it, files and tutorial in flash format included.
