Do you have any faces selected on you mesh when you apply the unwrapper?
I've noticed in the past you do not get a sub-face option when you are mapping from selected mesh faces.

Just to be clear, make sure no modifiers are in Sub-Object mode when applying new mapping modifiers. Collapse your stack, then apply the Unwrap mod. See if that works.

hey guys, i made one side of face then unwrapped it.
i mirrowed the other side of face. how to do i see both side's unwrapped UVW in Edit UVW?
once i attach both mesh, the whole UVW will get messed up =/on the book it says attach both sides and give me a picture both face are connected, but i can't seem to do it anyhow, please help =(

After you mirror, then attach the two sides using Editable Mesh, collapse the stack (for safety's sake) then apply a UVW Unwrap modifier. UVs will not be messed up. What book are you following?
In the Edit UVWs window, both sides will be superimposed in the same place (because they have the same UVs). If you want one side of the face to use different UVs than the other, select one of the UV sets and move it to the left or right.

no, once i attached both side. unwrap gives me a new version of unwrapped face, instead of 2 seprated side face.
where it goes back to original if i just have one side of face... thats my biggest problem right now... i worked on it for the whole day but can't figure out, i deleted UVW map where it end up crash after all =/

Hmmm. Only thing I can think of then is perhaps you set your UVs to use a channel other than UV channel 1. Or you set UVW Unwrap to a channel other than 1.
Can you zip up your max file and post it?

ok, i deleted mouth, here it is

First thing, there are no UVs on the model. You do have a Vertex Color channel though, not sure why.
Model also had a bad bounding box. I used the utility Reset Xform to fix it, then collapsed the model.
Deleted a bunch of faces to make it fit the 20k limit.
Added a UVW Mapping mod, planar.
Added a Symmetry mod to mirror the head.
Added an Unwrap mod, selected one half and mirrored it.
Nothing fancy here. Hope it makes sense. Sorry I don't have any more time to spend on this.
Plenty of tutorials cover this.

You're going to have to be more clear.
Are you talking about the file I sent? Look at the top modifier. Both sides are there.
