Depends on what software you're using, they're usually software-specific.

A fantastic tool which is incredibly powerful and easy to use is uvlayout (http://www.uvlayout.com). However, you do have to buy it, this is something to look at. It enables the ability to quickly uv complex meshes both Polygonal and sub-d with amazing results. It can also be used as a plugin to maya, xsi, and other packages (check the forums).

For something free, look at the sticky thread leigh has posted here (http://forums.cgsociety.org/showthread.php?f=46&t=77484). If you understand the theory behind uv mapping you can apply the techniques to pretty much any software package.

Hope I've helped somewhat. :)

The easiest and most intuitive UV mapping tools i ever come across so far are in Luxology's Modo. It's not a small standalone but a whole program so you get more than you probably want now, and it costs more. However the tools are really nice, and so is it's modeler. :)
