Ive just started to learn rigging and my first question is.....does my mesh have to be a single mesh or can I attach multiple mesh items to a single skeleton rig?

You can attach multiple meshes to a single skeleton.

it's even advantageous to use multiple meshes, so you can skin weight them separately later on. gives you less headache.
