If you really needed the detail and had the time I would create a simple displacement map. A simple hand made reticulation texture from photoshop would do just fine. Can overlay some grain on top of the texture will bring it out more. Use a high res map to capture the details. After that adjust the other properties of the shader ot make it a bit dull and there you go. Let m kno if that helps.

I've hit problems trying to use displacement unfortunetly... as described in another thread:

the sponge object displays visible breaks along the edges of the surface... (Maya 8.5)

if you can go the fluids route, Viki164 has some really nice shape presets in this thread (2nd page):
