Sorry if I am posting in a wrong forum but I keep looking and can't find any recommendations to a good UV mapping software for Mac.

Could somebody point me in the right direction please?

Why dont't you try Blender? It is for free and you can find out very fast if you can use. If it is not good for you, you will know easier what you need in detail.
