I think a better option would be to purchase the academic version, but I'm sure that the minimal watermarks in EXP will not run-off prospective employers...
it should definitely be fine for certain reels like general animation or modeling and some lighting and rendering
but developement and display of certain skills requiring scripting and testing and using others addons will often not be possible. ie Exp would not be good place for a shader developer or TD(except some gui based rigging) to make a reel, IMHO.
I have a full copy of XSI, so one use I've found for EXP is as a test renderfarm, I use EXP to render tests of the composites of the scene I made on the full app so as not to use my main machine or license that I could otherwise be using to work on.

The quality you'll get with EXP is acceptable for a demo reel. It's not that bad if your image is smaller than the screen and you have a small watermark in the corner.
However, like Graham said, for more technical stuff, you be frustrated, as many functions are disabled in EXP. You should read carefully the limitations list before taking this path.
