I've had a lot of success in laying out subd UVs quickly and precisely by:
1. selecting small strips of vertical faces. What I do is select four or so faces at level 0, refine, which carries the selection to level 1.
2. Hitting planar map to effectively cut these UVs out. Then use auto map to lay the uvs out nicely (12 planes, less distortion, along U). The idea is to select straight regions with little plane variability.
3. Select shell (may have to do more than once?) and move that chunk aside. Then select a nearby strip of faces and repeat. Be sure to place the uv chunks next to another so that merge and sew is easy. Repeat the above until a sizable area is done and merge and sew the area.
to prevent slow down turn off the Subd componet Geometry display under the attribute editor. I turned off construction history but that doesn't stop merge and sew from accumulating.
