You have a few options. You could do the "sauce trail" entirely through an animated texture, or a blend material with an animated mask. The tricky part with this method would be synchronizing the bitmap animation with the noodle animation. Alternatively, you could use a particle system with metaparticles and dynamics for the collision with the floor, but this could get complicated and have not-so-realistic results.
Another interesting possiblity would be to use Peter Watje's Particle Paint (http://www.max3dstuff.com/max4/matParticlePaint/help.html) plugin. This works like the blend material, except you control the blend by using a particle system. You could link a particle spray (pointed at the floor) to your noodle, and it would control the blend between the floor material and the sauce material. This way, by turning on/off the PS, you could control when and where the noodle leaves a trail. You can set the particle system so that it is non-renderable, so you don't really have to worry about the appearance of the particles themselves.
There may even be other ways of doing this. That's what I love about effects - there are always so many ways of solving a problem:)
Best of luck,
RH
P.S.: a better subject line would be "Effects: path of sauce". It's not strictly a modeling issue;)
