Is someone know how to do like in old movie, the count-down before beginning. (Like the mouse icon while Adobe Premier load)?

Do you mean a SMPTE countdown?
A typical countdown starts at 10 and then upon reaching 2 seconds till picture start you have what is called a 2 beep and you cut to black.
Each number represents one second of time and then you have some other indicator or quarter seconds which you can do by putting a pie slice or square in one of the four corners of the frame for a quarter second.

If you use Premiere there is an option somewhere that allows you to add the a countdown clip (just look on the help), but you can always fake one in Flash or even After fx
