Normal: texture applies to the usual UV space of the object by being wrapped around it. Texture is not distorted.
Projection: texture is "projected" onto the surface...giving you a manipulator to place the projected texture. This is used for placing stickers onto a textured object. This method will also pre-distort the projection so that it looks proper on the object.
Stencil: Mostly like a layered texture where you can have 2 textures blend together. Dont know where you will need to use it.
