I'd get rid of the hokey angles. It looks like the horse has a 45 degree lean, which does not imply speed or adventure, as much as "I wouldn't want to ride something that leans that much..."
Your latest version has even more of a contrived tilt than the original...

What is the story behind the image? You have all of your elements plopped into the middle of the canvas, but not really saying much of anything. You've basically placed your horizon line directly in the middle of your canvas, as well. bisecting your image in two. There is no real movement of the eye allowed, no matter how big of wings you put on that horse, nor how much of an extreme motocross tilt you give it.
What is the source of that overly bright copper spotlight shining on the knight?
What is the reason behind the gigantic birds on the buildings and circling the castle thing?
What are the scribbly lines on the LH side of the canvas in the background going to be?
This shows some great atmospheric effects, but the overall image does not display enough thought into the composition to make it a dynamic scene.

I always sucked at composition, so I'm learning now, trying diffrent approaches :)

The latter versions are definitely better, but I'm not sure I understand the wings. They look out of place and very stiff. Besides, if he had wings, why would he need to ride a horse?
Almost finished... I'll detail it more in a free time.
