You just need to specify "Terminal Application" type instead of "Application" when you create a launcher...
well here on my side i have ubuntu 7.04, and i just create a launcher.
in the Launcher Properties:
Type: Application
Name: blender
Command: "/location/to/blender" *
Comment: (empty field)
* (with the quotation marks, if you have some folders with spaces in them)
or if you mean how to create a launcher on your desktop trough the terminal then
sudo mk launcher /home/username/Desktop/
or something like that should be it, i think.
the best place to ask would be the ubuntuforums.org though.
