The basic philosophy behind this workflow is related to the work of a live-action film director or a location scout: Going out into the real world and look for places that are suitable to the scenes and settings in a films concept and use existing places and buildings as a base for a film scene. I don't see a necessary reason to create everything from scratch in animation. More important for me is the magic word efficiency, because efficient production workflows give you more freedom to realize your vision. Usually 3D work starts with the naked 3D model and is textured afterwards. This is kind of a reversed workflow, it starts with the texture and the geometry comes later...
