I would go for a texture approach, If you´re not going to show the strings REALLY close.
Create an elongated polygonal plane and place your string texture, basically a white line on black (use as alpha as well). Also create a "strummed" string bitmap, blurred sideways. Then, timed with your sound, make a layered texture blend between the two bitmaps. If you want the string to have depth as well, put another polygonal plane, rotated 90 degrees around it´s own axis, with your first string texture and lower it´s opacity whenever the strummed texture sets in.
I´m a Maya user, but I think you can apply this in any package.
