I have been teaching myself modelling in Maya, but don't have the confidence to create realistic textures and shaders. To be honest, I don't know how and where to start.
Please need help and instruction on how to start (vizualise etc.)

Any help (and crits on the modelling) most welcome!

Have no fear. Everybody starts somewhere. Before you start messing with shaders or textures you need to familiarize yourself with the UV texture editor. You also need to discover YOUR method for laying out UV's. That all depends on the format you will be delivering your textures in. If you're working In game you will have different constraints than a pre-rendered animation. I assume this is a personal project. Solid, non overlapping UVs should be your main concern at this point. Once you have that, then familiarize yourself with tools such as bodypaint / Deep Paint, ZBrush or MudBox. Go through the Gnomon DVDs on texturing and you'll be fine.

Having a good texture library on hand will be a good idea. Once you establish your scene, go around your neighborhood taking high rez photos of textures you want to create in 3d. Body Paint allows you project your textures on your 3d surface and paint out seams with minimal streaching. go through some simple tutorials on UV layout and bodypaint interface. BodyPaint is very user friendly, i picked it up and started using it in production the same day. Good luck!

Thank you for the reply. I agree, finding my own method will take some time but will be worth the effort in the end. Will also try different packages to see which is best suited for me.
