How can I animate a texture change along a path? For example, imagine one had a brown tree-like shape. How could the texture morph from brown to green as if flowing through the object from the base. Kinda like the pink liquid through the throat in the peptobismol ads.

An ideal solution would be the ability to move a proxy green object, say a sphere, over the tree shape and wherever it overlaps with it becomes green. So, in essence, the sphere is 'painting' the main object.

well methods good very greatly depending on the type of surface and it's structure
if it's just a tube you could use a ramp and just animate the position of the colors
if your trying to do this more volumetricly you could try using a projection map
look in the docs for different types but your sphere idea may best relate to a concentric projection
This is kind of like jaw breaker with rings of color going from center out
so if you could then animate the position of color on a ramp or may be the size of the projection node
