Your sensitivity level (from my experience) defaults to a really sensitive level when you plug in your tablet and the drivers are loaded. If you go into your control panel (assuming pc, don't know how to do this on a mac) just double click on your table driver icon, there are settings in there you can change. I'd assume for a mac, open the utility manager and there should be the same general thing, icon for your tablet.
For brushes themselves, assuming you've opened up the brush tab in the upper right of the top tool bar, there are a bunch of settings you can change for if you tilt your stylus or rotate it or pressure and so forth.
One tip I have, always play with blending modes, like when adding a texture to a brush, try out overlay or hard mix to see the great difference between the blending of a texture into the brush. (In the brush editor)
For Mac, just click the apple menu and go to system preferences.
There's a small box in the tablet preference pane that allows you to test your pressure settings by applying varying amounts of pressure and it gives you feedback with a progress bar.
You'll want to take some time and play with it to see what suits you best.
If you're gonna be primarily drawing with it, I can suggest some good sketching software. Alias(now Autodesk) SketchBook Pro.
I tried it on a whim. But it's become an important asset now.
As far as brushes, I've accumulated many through the years because it seems that the ones I have are never the ones I need. So I create new ones. For some reason, preset brushes aren't that great. I always need something different.
