from outliner? or hit select for the node tab in attribEd. or in the viewport if its a selectable..

Yeah, that's a good/fast way. While you're looking at the node's attributes you can click the 'Select' button in the bottom left corner of the attribute editor, and then just press delete.

Or another way is to just type "delete nodename" into the commandline (without the quotes of course).

I'm possibly getting my terminology screwed up here.
I mean for instance a UV map attached to an object. If I want to delete that...

Yeah no it's the same thing,
While you're looking at it's attributes/properties in the attribute editor you can press the select button and then delete it.
Or type "delete whateverit'scalled" and it will delete it.
Everything in Maya is a node with attributes.
