ive been using 3ds max for a while now and i first started out using box modeling to start out anything. but i didnt get the results that i wanted and then i introduced my self to plane modeling, which is just cloning edges from a single plane starting from around the eye and then building up from there. ive also looked at how some people in the industry model using planes and thats the standard that im surrounded with. it really all depends on a matter of preference.

In Maya I tend to start out with a simple polycurve and build that out by extruding edges
I found it to be a nice way to model a head
