I've been thinking about replacing my current computer with a Macbook Pro, but I want to be sure that Maya and my plugins will still work, once I get Windows installed. To do this I'd be looking to change the network adapter's MAC address.

On my current system it's pretty easy - there's a "network address" field in the adapter's advanced properties (in Windows) that lets you override the burned-in address. Another machine has a "Locally Administered Address" field, which I assume is the same thing. Does anyone know if the MBP has an option like this?

You want to spoof the MAC address? (MAC address is short for Machine Address)

People often do that if they want to break into someone elses Wi-Fi network that has been set to only allow certain machines access.

It can be done with any OS. I haven't done it, though. I know it can be done on OS X. But how you do it would depend on the OS the Macbook is running at the time.

So when you're running Windows XP on a Macbook, the machine is a Windows machine, like any other Windows machine.

I believe it is dependent on the drivers for the network card. Sometimes there are cracked drivers available. You should Google search for MAC address spoofing.
