I've attached an example from the manual, as you can see there is a gradient on the extruded polygons in the V direction. I am trying to replicate this, but the UVs tile per extrusion step. Unfortuantely I need to use this particular method of extrusion rather than a sweep etc., but I cannot seem to find a way to evaluate the uvs based on the length of the extruded poly - were maxon just cheating with a 3d linear gradient in this example?

Yes. The Extrude Deformer only creates per-polygon mapping.
