I'm trying to achieve this, and right now the dude is getting booleaned (Difference mode) with the wires. Because this heals up on the other side, the wires (which are boxes for the boolean purposes) go on forever so he never heals up. The problem is I want these new polys revealed inside to have a new material (blood, guts, etc.) which I can't work out how to do. The other method I thought of was would be to pre-cut him up and just immediately swap him out and make him fall over with bones or soft-bodies or whatever. Has anyone faced a similar task of cutting something up like food or something?

Maybe you could use two intersection booleans in addition to your difference one(one for the top of the wire, one for the bottom). That should give you two slices you can texture separately...

Maybe try duplicating your character, cut up the second one, texture the guts/insides then use shape animation to split him when he hits the wires.

I'd start out with the mesh already split up. Then envelope the whole to the rig as a single mesh (possibly gator could help here) and simply at the right moment use some individual deformers per "slice" to create the split.
