looking good so far. Show a pic of the wireframe...that's often the most important part if you're going for low-poly.

your model looks good! though your hoofs look a little out of proportion to me

I think what needs work is the reference picture, in that the proportions are not quite right.
The neck is too short and the general shape of the head doesn't look quite right. Also the area where the front legs meet the body needs some work.
Some references that might help, although of course need to be adapted to suit the more built horse you are working on:

Ok thanks for the pictures, but that is not what im going after. Have you guys seen the horses in world of warcraft ?.
Mine is kinda like those. Not very real and not very cartoonish.
You will see why the hoves are so big when i add the textures.

Ok made the uvwmap for the horse today. I think i have erased most of the shrinks.

This is beginning to look like a draft horse to me. You'll find them running around in Budweiser commercials. So sure, the proportions will look odd to some people. The hoof and ankle area of these animals are very large since they are a stocky creature. Looking good.

Clydesdale horses have a big blonde shaggy strip of hair running down from the top of the head to the back of the neck. Not sure if it’s something you might want to try and model of a flat plane, faking it with a texture might not look right….just a thought
Just looks a little odd without it. Otherwise very good low poly model.

yeah i have thought of that. And i am going to try modelling it with a plane. And then apply a transparancy map to that. Thx for the tip anyway :D

For the moment i have used a 1024*1024 map for the skin. Dont know if i will keep it like that. We'll see about that...
