How would I animate this? As you can see there's an interior body(black) and it's covered with armor plates. For example how would I be able to bend the abdominal and have the ab armor move accordingly since it's not part of the main body?

Rigid bind the plates, select the cvs of each seperately, and take your time, you'll get good results.
