the look you are looking for , does include a skin shade,r i would always go with this, even if it wasnt so obvious, your examealing that its a skin shader, thats nice..
just in maya , use mental ray skin shader, the thing with this shader in your example is that it has fairly little sss, and has more hard look, not so soft as real skin, just follow a mental ray skin shading tutorial, and tweak it till you get something like this.
dont bother with all the maps at first, just get a head or some object like that, throw on some bump map, and for the rest just tweak with the sss color slot and difuse color, specular en reflectivity, dont bother to much with rims in spec effects etc, the way to go is keeping it simple, try to get the basic look at first, than go further.
