What we need is a vmware that can do the opposite. If I could run Macosx virtualized on my linux distro then I would be the first in line.

...Sorry, this will not happen yet. Microsoft has still too many market shares for Apple to be able to offer that without commiting suicide...

Would this be a better option than Parallels in regards to getting decent OpenGL performance?

I would assume so, a true VM should have native drivers for the graphics card and as such have better performance than parallels, which inly uses CPU for graphics due to a lack of drivers.
Parallels is working on a better graphics driver though, and say that an updaed version of their software will be available with better graphics support sometime around the end of the year.

The alternative is just to load all 3 operating systems onto the Macintosh hardware. But then you must reboot to change OS.

This way, virtualization is not required. Unless you want to run different OSes simultaneously.
