What is the best way to model say charactor if you want him or her to be really high poly model that looks real life and why? What is better to use ploy or nurbs. when and why would you use nurbs or ploy or use both? ps what is the best way to make real looking human skin?

Try polymodeling for hi-rez organic model. As for skin texture, take a hi-rez digital camera and take pictures of yourself or your friends, and edit in PS...to knock down the blemishes and other grody areas.

Nurbs and Polys both have there pros and cons.

Asking the question of which is better has been known to start fueled arguements around here. Everyone has a specific way they like to model. Some people are hardcore Polys, and some are hardcore Nurbs. I think that you can get similar results with either.
Your best bet is to sit down and try them both out and see what you like best, because that's the only way you'll find out.

As for getting reallistic skin...it's all in the shaders, but that's not a topic I would be willing to get into.

if you are modelling a high res character which you intend to animate then you have to plan ahead somewhat. To avoid as much rundancy as possible and to keep things fast...you will need to have a low res poly mesh behave as a wrap deformer that will control the high res nurbs/poly/subD object.
