There is a little 'galaxy' tutorial in the help files.
The way i created stars are by using paint effects.
I would like to know also if there are other ways to create many stars and doesn't use much resources (for example, i wanna have the same stars in background effect like in star trek).
Anyway.... using paint effects (and the visor) is one way to create stars
and you can texture a sphere to easily create earth or other planets :)

Depends on you shot, but you could do it with particles. Create an omni emitter with no speed for the paticles and lets say 1000 particles per second. Then Put you min and max values to e.g 150 and 200. Playback until you have as many stars as you want, save teh initial state for the particles and delete the emitter and voila!!
This might be a little bit resource intesive but you will have some parallax when you move the camera (you won't have that with a shpere and texture)
good luck!!

I've textured a semi-sphere with the leather texture and some modifications and gotten nice looking stars. Nisse's idea is good for getting that paralax thing where as my method doesn't, but it's quicker in terms of making and rendering.
