I haven't used them, but I know people that swear by the Total Training DVD series. Digital Tutors and VTC (Video Training Course) also has some Photoshop training DVD's worth a look.

I don't know what level you're at and which direction you want to go in, but check out www.dvgarage.com (http://www.dvgarage.com/), the first DVD gives you a quick tour of the interface and goes into layers, color correction, cloning etc.; the content of the second DVD is centered on extracting elements using advanced techniques (pen, channels, calculations), but since this is so fundamental to almost everything in Photoshop, I'd highly recommend it and Alex is a great teacher
there are also two books by Katrin Eismann which are very good and I believe she has them also in DVD format
lynda.com has some interesting stuff by Bert Monroy geared towards illustrators but it can be used in other contexts too

If you specifically want to learn more about painting in Photoshop, Gnomon offers a number of great titles. Neville Page and Yanick "DUSSO" Dusseault offer some excellent tips on painting in Photoshop. Many people swear by Dillan Cole, too, but what little I've seen of his DVDs doesn't seem terribly helpful. "Adobe Photoshop for Digital Production" looks like it could be helpful for general purpose stuff like what you're talking about.
