Running it in Rosetta (OS X) or bootcamp (Windows)? If its the latter, try digging up an older driver (Geforce cards aren't officially supported by Autodesk, only "workstation cards" like the Quadro). If its OS X, I'm not exactly surprised, since its being emulated through Rosetta, though your problem sounds more like a Graphics card issue more than anything.

Can't help you there (might need to hit up the official Mac forums). Though the problem seems to be more graphical related, I was speculating that because its being run through Rosetta, essentially a emulation system, that some stuff just wasn't translating properly. My current line of thinking, suggests that the problem may go away if Maya had a mac-intel version.

However, it really could just be a graphical problem none the less, since the 7300's are still new to the Mac (Apple's nvidia drivers have always been.. poor). I know theres a couple other Mac Pro users on here (search for Mac Pro this week; you guys keep popping up) - see if they are also experiencing it in OS X (I'm surprised anyone wants to run Maya via Rosetta - everyone keeps talking how slow it is doing that).
