Anothor common technique (particularly for characters) is spline based modeling. Place splines around the major lines of a model, then patch them together.

I couldnt find anything about plane modeling, what is this supposed to be?

Isn't that where you start with a line as a shape and extrude out the edges to form polys and continue pulling out the edges to make more polys.

That's how I make heads.
