An easy way to have animated water is to go to the materials selection, and select animated water, and there are a few presets there. If you were wanting to make your own texture for water, in the material editor, press "animate material surface (Z=time)". Both these give an impression of moving water with materials/textures. I have not yet figured out how to animate waves.
As for making something similar to that of the e-on logo that you posted. You use ecosystems on a plane.
-Create a plane by presing "shift+P"
-Resize to the size you wish it to be
-Go to material editor (make sure you have advanced material editor selected)
-Press ecosystem under type
-Add the desired tree or whatever object you wish
-Press populate
-Preview render, check size and how dense the amount of trees is (or other objects)
-You may require to change the density and size of the trees to get the right look, go to density panel and play around with the "overall density" (make sure you have avoid overlapping instances, because it is more realistic) NOTE: YOU MUST PRESS POPULATE EACH TIME YOU MAKE A CHANGE FOR THE NEW SETTINGS TO APPLY, OTHERWISE NOTHING CHANGES
-Go to scaling and Orientation, change the "overall scaling to suite" (You may wish to change the scaling before changing the density to get a more accurate measure of the density (Again make sure to press populate after any changes)
-After you have you field of trees (or other objects) set, you want to have them in the shape desired, in this case "e-on". You do this by pressing back on the density tab, and tick the "variable density" tab. Then right click on the sphere and press "edit function". The function editor may be overwelming for some people, but we wont need to do to much in it. Press to highlight the little density tab, next to the color tab. Then go to the left hand side and press the button that says "Add texture map node". You will then see a sphere in a box come out from the density tab. Click on it once, then you will notice some settings appear down below. Right of the word image is a big square, double click on it.
(You now need to make the word you want in a picture editing program)
For this example we will just use paint.
-Minimize vue
-Open Paint
-Make the background black (black will be where there will be no trees)
-Type or draw the letters you wish to have made out of trees, make sure the font is thick and also the font color white (White will be where all the trees are placed
-Save the file as a bmp where ever you desire (good idea would be to keep it with your vue scene)
Go back to vue, locate your bmp file, press ok, press ok, press populate, then press ok
All done!
Hope that helps mate

-A square with a sphere will appear branching off from the density tab. Click on it. You will see some settings appear on the bottom of the window, double click on the big square left of the word "Image" in the "Texture map node" section. Select import file.
Minimize Vue
You now need to make a image of the writing you want made out of the tree. For this example we will be using mspaint because of its simplicity, though other programs like photoshop will work too.
-Once in MsPaint fill the background with black (the black is where there will not be any trees (or other objects)
-Then use the text tool to type (for this example) the word "E-on" (like the example image posted above) The Font needs to be quite thick, so i would suggest using bold, and/or a thick font. You also need to set the font color to be white (white will be where the trees will be placed)
-Save the image as a .bmp (would suggest saving it near your vue scene, so if you need to back up the scene, you will remember to back up the texture file as well)
Go back into Vue, Select the file you just made, press okay, press okay, Press populate again (to update your ecosystem) then press okay. You are all done.
Hope this helps :)
