I am trying to edit a path, but every time I try and delete an anchor point the entire path deletes. It is driving me mad. The path is not saved and is on a working path layer. Please help!

There are two selection tools for working with paths, use the direct selection tool(white arrow)

If you are just trying to delete an anchor point - you don't want to use direct selection as that will delete the point and part of your path. Use the delete anchor point tool - which can be accessed by clicking on and holding down the pen tool a dropdown menu will appear with 4 different pen tools (it looks like the pen tool with a minus sign next to it).

If you are trying to delete a part of the path to create an open line, use the direct selection tool. You can access this tool by clicking on the path selection tool and holding it down. Direct selection will pop up with the dropdown menu.

Note: Make sure that your path is only active not selected before using either one of these tools - If you can see all of the nodes on the path and they are filled in (solid color) then the entire path is selected, select somewhere outside the path on your layer, select your tool and then select the path. If you have done it right then all of the nodes will not be filled in - just the one you selected.

Just grab the "Convert Point Tool" and right click on the point you want to delete. Then select "Delete Anchor Point".

This occasionally happens to me in CS2 Mac. It seems like it is some sort of internal crash or bug.

Restarting PS or rebooting the machine fixes it for me.
