I was a UNIX sys admin for a decade, so my opinion is kinda slanted. It's darn nice for me to use tools like RCS, rsync, tar etc for revision control and backups. Knowledgeable windows users can do the same things in Windows, I'm sure - UNIX tools are just what I know.
As for linux, it might be good to stick with a qualified flavor. http://www.alias.com/eng/support/maya/qualified_hardware/QUAL/maya_70_linux.html
Because of the sweet educator's discount and the BSD flavor OS, I went with a Dual G5 mac. I've been very happy with render times and performance.

It really depends what you are using Maya for and what you want to get out of it. At work we are running linux on the farm and on for our lighting/rendering team. We often have issues because many plugins used in the animation/shader/fx departments are designed with windows in mind. Personally- if I were deciding based on the ability to work within a studio environment- I would go linux. I get the impression that it would be more compatible with other systems- if we create something on linux it usually can pass to windows... not always the other way around. Also, it seems more and more studios are linux based (if you feel this isn't the case, I'd like to hear it.... cause I'm not backing that up with fact, just hearsay) If I were thinking about my home machine that would be outside any linux farm- I would go win x64, giving me the extra power I need but hopefully allowing me more opputunity to use common place plugins. I would not go Mac simply because I am not a Maverick- Animation is typically done in a community and currently Mac is not the established OS for Maya. Just my opinion- not based on techincal ability, just my desire to avoid frustration.
