Sometiems I see people rendering to like a beige putty or something, is this just a material or an option in the rendering properties?

I think you mean GI (global illumination) and that makes it look like clay (putty, if it is that you mean).
Soft shadows, boucning light etc..

Well you can create that with max, but it's difficult.. so most is probably using Brazil rendering system ( www.splutterfish.com )

It's a combination (low specular and stuff, like a pale material)

Max 5 Has a Skylight now that does a nice job of that look....also I believe Brazil will have another freeware version available soon....or maybe I have that wrong...seem to recall reading that at their forums a week or so ago....
