Use ZSpheres, my friend. If you don't know anything about ZBrush, your first step must be go to ZBrush Central (http://www.zbrushcentral.com), and download the practical manual. In pages 263-277 you will find a very detailed tutorial about making a head.
In ZBrush Central (http://www.zbrushcentral.com) you will find a lot of tutorails and tips too.
