I have created a couple of characters and am having trouble working out how to apply a skin to them. I am very new to maya and was wondering if their was a way to flatten out my models so I could paint the skin in photoshop and then simply apply it as a texture to my characters. Any advice or links would be much appreciated.

You need to learn about uv coordinates and how to edit them. These are the things that enable you to lay out your skin and paint the texture (you dont have to flatten the actual models). Its too much to explain here, but there is alot written on the subject, both here at cgtalk and in the manuals.
