If you already got rid of the specular channel, you're gonna have to do something to get rid of the shine...powders of course, don't have much of a shine.
and you should be more subtle using the terrain tool to make the piles of the spice.
...the spice brings life, the spice expands consciousness... :)

The paprika on the left is fine, but the other seem far too solid. first of all, set the shading modes in the materials all to Oren-Nayer. This will diffuse the light around the material to reduce the shine.

one thng i have noticed isthe distinct banding on the one red spice on the left in both images and on the one yellow spice on the right (the left yellow spice has it as well but far more subtle) Also, not too get too off subject, but the wood petals look as though you applied the texture to the group of petals rather than individually, it appears as if they were cut out perfectly in position from a large board when likely the would all be cut along one smaller narrower board meaning the grains would all be slightly off.
Great suggestions about the spice already will wait to see the results, one other suggestion I could make for powders is to use chanlum to give even more control over the diffusion for a softer yet rougher surface if that makes any sense

the big problem is the reflection caused by the gradient in the color channel.
Another problem is to have a fast way to make the secondary surface quickly and more realistic because it seems bump and displacement are not enought.
I think the idea to use the landscape is good!
