Hi. =D
Well, this happened because Blender donīt (yet) support N-Gons, just triangles and quads. So, you have to select 3 ou 4 vertices (i suggest 4 if you plan to apply Subdivision Surfaces) and press "F" until the whole dragon is filled with faces.

Now you should start extruding the edges to really make the dragon model.
Take a look at these videos to have an idea of what you can do:
Thomas Roussel - Hexagon Modeling (http://www.eovia3d.net/showthread.php?t=6281)
Community Journal#2 - mr_bomb face tutorial (http://www.blenderartists.org/cms/fileadmin/Articles/CJ/2/adrianna_xvid_fixed.avi)
Not video:
A Better Face Tutorial version 1.1 by TorQ (http://www.elysiun.com/forum/viewtopic.php?t=21066&highlight=face+tutorial)
Look at TorQ tutorial first, it should answer some questions then, watch the videos. :thumbsup:
