Does anyone know of any good tutorials on modeling and island and ocean? And also, what's that best way to texture land...is there a tutorial on that too?

What level of detail do you need? eg what is the final image going to be used for and how large?

I would probably use a combination of polymodelling with turbosmooth and Mental Ray displacement.
